Roasted Turkey & Broccoli
Breathe new life into your Thanksgiving leftovers with this easy baked dish from Chef Fabio Viviani.
Ingredients
- 1 small loaf French bread, cut into 1/2" cubes
- 1/3 cup butter, melted and cooled
- 8 ounces brie cheese, cut into small pieces
- 1 1/2 cup broccoli florets (thawed if using frozen)
- 1 pound turkey, sliced
- 3 Eggland's Best eggs
- 1 cup milk
- Salt & Pepper to taste
Preparation
Preheat oven to 350 degrees; prepare a 13 X 9 baking dish with nonstick cooking spray and set aside.
In a large bowl, toss bread cubes with melted butter; spread in baking dish.
Top with cheese and broccoli, spread over bread evenly; cover with turkey pieces.
In a small bowl, whisk eggs with milk, salt, and pepper.
Pour egg mixture over turkey and cover; allow to rest for 1 hour to soak up egg mixture.
Bake uncovered for 40 minutes, or until a knife inserted near the center comes out clean
Let stand for 10 minutes before cutting.
