
Red, White, and Blue Truffles

These Red, White, and Blue Truffles are perfect for Memorial Day, the 4th of July, or anytime you’re feeling patriotic!
Ingredients
6 Eggland's Best Large Eggs
1 tbsp vanilla extract
1/3 cup coconut oil, melted
1/3 cup coconut cream (the thick part at the top of a can of chilled coconut milk), melted
2/3 cup raw honey
2 cups almond flour
1/4 cup coconut flour
1 tsp baking powder
Other Ingredients
red and blue natural food colorant
1 cup white chocolate, melted
red and blue natural sprinkles
Preparation
- Preheat the oven to 350F. Line 2 square pans with parchment paper and lightly grease the sides of the pan.
- Blend together the eggs, vanilla, coconut oil, coconut cream, and honey until smooth. Add in the flour and baking powder and mix together.
- Divide the batter evenly between the 2 pans. Bake for 20 minutes, or until a toothpick comes out clean.
- Once the cakes cool, mush the cakes together and divide into 3 bowls. Add red colorant to one bowl and blue colorant to another bowl. Mix well.
- Roll a tsp of each color together to form a ball. Continue until no more cake is remaining. Place in the fridge to set.
- Use 2 forks to dip the balls into the chocolate. Add sprinkles, if desired, and enjoy!
