Ingredients

1 Eggland’s Best egg, large

½ cup certified gluten-free rolled oats

1 cup unsweetened almond milk

 ½ tsp cinnamon

1 tbsp ground flaxseeds or chia seeds

¼ cup fresh berries (blueberries, raspberries, or strawberries)

1 tsp honey

Preparation

  1.  In a small saucepan, cook oats with almond milk over medium heat until thickened. Stir in cinnamon and flaxseeds.
  2.  In a separate pan, cook an Eggland’s Best egg sunny-side up or over-easy.
  3. Pour cooked oats into a bowl, top with fresh berries, and place the egg on top.
