Ingredients

2 tablespoons olive oil

1/2 pound deli ham, diced into small pieces

12 Eggland's Best egg, large

Freshly ground sea salt and black pepper, to taste

¼ cup whole milk

1 cup sharp cheddar cheese, shredded and divided

Preparation

  1. Begin by preheating your oven to 400°F (200°C).
  2. Place a 12-inch oven-safe nonstick skillet over medium-high heat and add the olive oil. Once the oil is shimmering hot, add the diced ham. Cook while stirring occasionally until the ham develops a golden-brown crust and becomes slightly crispy around the edges, approximately 4-5 minutes.
  3. While the ham is crisping, crack the eggs into a large mixing bowl. Season generously with salt and freshly ground black pepper, then whisk vigorously until the eggs are well combined and slightly frothy.
  4. Gently whisk the milk and half of the shredded cheddar cheese into the egg mixture until evenly incorporated.
  5. Pour the seasoned egg mixture over the crispy ham in the skillet. Using a heat-resistant plastic spatula, Gently pull the eggs away from the sides of the pan once or twice. Allow the eggs to set on the stovetop for 1 minute.
  6. Sprinkle the remaining shredded cheddar cheese evenly over the top and transfer the skillet to the preheated oven. Bake for 13-15 minutes, or until the center is fully set and the top begins to turn golden brown.
  7. Remove the frittata from the oven and run a spatula around the edges to loosen.
  8. Carefully slide the finished frittata onto a serving platter or cutting board. Cut into 8 equal wedges and serve while warm.
