Crispy Fried Artichoke Hearts with Lemon Aioli
Families have been making the classic Artichoke Dip for decades. This new spin on a family favorite deconstructs the ingredients into a fun and visually pleasing appetizer. Used two ways in this recipe, Eggland's Best eggs are also the binder in the delicious crispy coating on the artichoke hearts.
Ingredients
1 Eggland's Best egg, large, yolk only
2 Eggland's Best eggs, large
2 cloves garlic
3/4 teaspoon salt, divided
1/8 teaspoon cayenne pepper
1/2 cup extra-virgin olive oil
2 tablespoons lemon juice
28 ounces jarred marinated artichoke hearts, drained
1/2 cup all-purpose flour
2 teaspoons garlic powder
1/2 teaspoon ground pepper
1/2 cup seasoned bread crumb crumbs
1/2 cup parmesan cheese, grated
1 cup grapeseed oil
Preparation
Lemon Aioli:
- In a food processor, combine 1 Eggland's Best egg yolk, garlic, 1/4 teaspoon salt and cayenne pepper and pulse until mixed. In a steady stream, add olive oil until sauce is thickened and emulsified. Add lemon juice and pulse until well combined. Transfer aioli to a dipping bowl.
Fried Artichokes:
- Pat artichokes dry between paper towels.
- In a shallow bowl, combine flour, garlic powder, 1/2 teaspoon salt and ground pepper. In another shallow bowl whisk 2 Large Eggland's Best eggs. In another shallow bowl, combine breadcrumbs and parmesan cheese.
- Dust artichoke hearts in flour mixture, then dip in beaten Eggland’s Best eggs allowing excess to run off, then coat in bread crumb parmesan mixture.
- In a 10-inch nonstick skillet heat grapeseed oil over medium heat and fry artichoke hearts in two batches turning to brown all sides about 2 minutes a side or until golden brown and crispy. Drain on paper towels.
- Serve crispy artichokes on a platter with bowl of Lemon Aioli.
