Crab Egg Salad
Incredibly simple and delicious Crab Egg Salad, made with few ingredients like crab sticks, eggs, onion and mayo. Make-ahead for your child's school lunch and serve it with crackers or crunchy cucumbers. Kids approved!
Ingredients
12 oz crab sticks, grated
6 Eggland's Best eggs, large - cooked for 10 minutes and grated OR 6 Eggland's Best Hard-Cooked Peeled Eggs
1 small onion, finely chopped
1/2 cup mayo, more if desired
salt & pepper, to taste
2 tablespoons parsley, finely chopped
Preparation
- Combine all ingredients in a bowl and mix, season with salt and pepper to taste and enjoy with crackers or cucumbers.
Recipe Notes: To make it faster add everything to a food processor and pulse until everything is evenly chopped.
