Blueberry Oatmeal Bran Muffins

Ingredients
- 3/4 cup oats
- 1 1/4 cups whole wheat flour + 2 tablespoons
- 3/4 cup no calorie sweetener
- 3/4 cup oat bran
- 4 tablespoon flaxseed meal
- 4 tablespoon wheat germ
- 2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 2/3 cups buttermilk
- 1 jar apple sauce
- 2 teaspoons lemon rind
- 9 tablespoons Eggland's Best 100% Liquid Egg Whites
- 2 cups blueberries
Preparation
Preheat oven to 400°F.
In a medium bowl add together all dry ingredients. Meanwhile in a large bowl add together all wet ingredients. After mixing, combine both.
Mix 2 tablespoons of whole wheat flour with the blueberries and add to the mixture.
Spray muffin pan with non-stick spray and spoon the mixture into the cups. Bake for 20 minutes.
