Avocado Egg Salad

Avocado salad made with avocado, hard-cooked eggs, green onion, mustard, salt and pepper. Packed with protein, fiber and healthy fats.
Ingredients
2 Eggland's Best Hard-Cooked Peeled Eggs
1/2 large avocado
2 green onions
1 tsp dijon mustard
salt and pepper, to taste
Preparation
- Combine two hard-cooked eggs and avocado in a bowl. Use the back of a fork to mash them together.
- Add mustard, green onion, and salt & pepper. Stir to combine.
- Toast a piece of your favorite bread, then top the bread with the egg salad.
