Asparagus and Tomato Frittata

Ingredients
6 Eggland’s Best egg whites, or 1 c. 3 Tbsp. Eggland's Best Egg Whites
½ cup chopped salad onions
½ cup chopped red bell pepper
1 cup chopped asparagus
1 cup chopped beef tomato
2 tsp whole milk
1 tsp sea salt
1 tsp ground pepper
1 tsp extra virgin olive oil
Preparation
1. Preheat the oven to 450°F.
2. Heat the extra virgin olive oil in an oven-ready pan on the stove-top. Add the chopped salad onions, bell pepper, and asparagus to the pan and cook for three minutes (until soft). Set aside.
3. Whisk together one whole Eggland’s Best egg, six egg whites, two teaspoons of whole milk, one teaspoon of sea salt, and one teaspoon of ground black pepper together.
4. Add the chopped beef tomatoes to the pan.
5. Pour the egg mixture into the pan and ensure that it covers the pre-softened vegetables.
6. Put the pan in the preheated oven for around eight minutes.
7. Remove the pan from the oven and return it to the stove-top to heat over the burner for an additional three additional minutes.
8. Allow the frittata to cool before slicing it and enjoying it!
