Zucchini Fritters
Hobak Jeon, Korean zucchini fritters, are pan-fried zucchini slices dipped in flour and egg, then cooked until crispy. They're often served with a soy sauce, vinegar, sometimes with a bit of sugar or sesame seeds.

Ingredients
1-2 fresh zucchini
1/2 cup of flour
3 Eggland's Best eggs, large
1 tablespoon of sesame oil
1 tablespoon of olive oil (or any oil)
Preparation
- Slice zucchini into 1/4 inch thick slices
- Prepare a plastic bag with 1/2 cup of flour
- Place zucchini slices into the plastic bag and shake to coat each slice with flour
- In a bowl, beat 3 eggs and add 1 tablespoon of sesame oil
- In a skillet on medium heat, add 1 tablespoon of oil. Once hot, dip one floured zucchini slice into the egg batter and place on the skillet to cook. Continue until the pan is filled
- Cook on each side until both sides are golden brown (2-3 minutes per side)
- Serve with soy sauce
