Veggie Mango Deviled Eggs

Ingredients
10 Eggland's Best Hard-Cooked Peeled eggs
1 tsp fresh dill
1 tsp McCormick Roasted Garlic & Herb
1 tbsp very finely chopped celery
1/2 tbsp very finely chopped dill pickle (may use dill relish)
1/2 tbsp finely chopped cherry tomatoes (no seeds)
2 dashes of cayenne pepper
1/2 tbsp very finely chopped green onions
1.5 tbsp yellow mustard
3 tbsp mayonnaise
1 tbsp sour cream
Juice of a lemon quarter
Thinly sliced mango
Cilantro sprigs for topping
Chopped green onion for topping
Paprika for topping
Preparation
- First combine egg yolks with mustard, mayonnaise, and sour cream. Ensure that the ingredients are well-mixed. The texture should be smooth and creamy.
- Add the fresh dill, roasted garlic and herb mix, and cayenne.
- Fold in the celery, dill pickle, cherry tomatoes, and green onions.
- Squeeze lemon and fold juice into the mix.
- Scoop mix into hollow of the egg-whites. Dust each filled egg with paprika.
- Top each egg with two thin slices of mango, the chopped green onion and a cilantro sprig (try to create a design - use mango strips to create a bow or figure-eight around the sprig of cilantro).
- Devour!
