Ingredients

1 cup diced cooked potatoes
3 tablespoons sliced green onions, including both white and tender green parts
1 cup cooked ground breakfast sausage, crumbled and well-drained
1/2 cup crispy cooked bacon, chopped into 1/4-inch pieces
1/4 cup chopped fresh tomatoes, seeded and drained of excess liquid
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup shredded sharp cheddar cheese
2 tablespoons fresh Italian parsley, finely chopped
Preparation
- Begin by preheating your oven to 350 degrees Fahrenheit (175°C). Position the rack in the middle of the oven for even heat distribution. Take a 12-inch cast iron skillet and place it over medium heat, allowing it to warm up gradually to ensure even cooking.
- Add olive oil and heat until shimmering. Stir in pre-cooked diced potatoes and sliced green onions, cooking for about 5 minutes until golden and fragrant. Add crumbled sausage, crispy bacon, and chopped tomatoes, stirring to combine.
