Ingredients

6 Eggland’s Best eggs, large

1/2 cup of shredded cheddar cheese

6 slices of turkey bacon

1 TSP of cheddar cheese (optional)

Salt and pepper

1 package of puff pastry sheets

1 turkey shaped cookie cutter

Preparation

  1. Make your scrambled eggs using 6 Eggland’s Best eggs, a dash of salt and pepper. Add 1 Teaspoon of cheddar to the mixture (optional).
  2. Mix together in a bowl until completely combined.
  3. Pour most of the mixture into a pan and cook until scrambled. Save some of the egg mixture to baste the dough.
  4. Cut up turkey bacon into small pieces.
  5. Roll out puff pastry sheets and using the turkey shaped cookie cutter, cut turkey shapes out of the puff pastry.
  6. Fill one side of the turkey dough with turkey bacon, scrambled eggs, and cheddar cheese.
  7. Use a fork to seal the turkey empanadas shut and make two punctures at the top.
  8. Place them on a parchment lined baking sheet pan.
  9. Baste the empanadas with the leftover egg mixture.
  10. Place in the oven and bake at 350 for 30 minutes.
  11. Let cool, serve and enjoy!
