Triple Berry Lactation Waffles
To freeze, let waffles completely cool. Keep waffles in freezer friendly ziplock bag. If placing multiple waffles in one bag, use parchment paper to keep them from sticking. When ready to eat, thaw in microwave or heat in toaster!

Ingredients
- 1 ¼ cups all-purpose flour
- 1 cup oats
- 2 tablespoon brewer’s yeast
- 1 Tbsp baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoon ground flaxseed
- ½ cup coconut sugar
- ¼ cup maple syrup
- 1 ½ cups milk
- 2 Eggland’s Best eggs (large)
- ½ cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup mixed berries
- Powdered sugar, for topping
Preparation
- Preheat waffle maker.
- In a large bowl, whisk dry ingredients (flour, oats, brewer’s yeast, baking powder, cinnamon, salt, flaxseed and coconut sugar).
- In a separate bowl, mix your wet ingredients (maple syrup, milk, eggs, coconut oil, vanilla extract).
- Add wet into dry ingredients and mix. Allow batter to sit for a couple minutes to thicken. Add mixed berries last to prevent staining.
- Pour batter onto hot waffle iron and cook for a few minutes, or according to waffle maker directions.
- Once done, top with more fruit and powdered sugar, if desired.
