Ingredients

  • 6 Eggland's Best Eggs (large), boiled, cooled, and peeled
  • 1-2 Tb Sour Cream
  • 1 Small Tomato, chopped
  • 2 Green Onions, chopped
  • 1/2 Cup Taco Cheese Blend
  • 1 tsp Favorite Taco Seasoning Blend
  • Shredded Lettuce to serve (optional)

Preparation

Slice eggs in half and gently pop the yolks out into a bowl.

Using a fork mix in sour cream to make a paste (add more or less to get your preferred consistency).

Mix in tomato, onion, cheese, and taco seasonings.

Spoon mixture into eggs.

Serve over a bed of shredded lettuce and enjoy!
