Sunrise Breakfast Burrito

Ingredients
- 6 Eggland's Best eggs, large
- 1/4 cup chopped spinach
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons hazelnuts, chopped
- 1 tablespoon sliced almonds
- 1/4 teaspoon salt
- 6 small tortillas
- 6 teaspoons Mayonnaise
Preparation
- Preheat oven to 325 degrees F.
- In a medium bowl, combine eggs, spinach, hazlenuts, almonds, and salt; mix well and pour into a large non-stick skillet.
- Cook over medium-high heat until eggs are set, approximately 5 minutes. Remove from heat and allow to cool slightly. Stir in parmesan cheese.
- Heat tortillas in oven for approximately 5 minutes; remove and spread with 1 teaspoon of mayonnaise each.
- To assemble, fill each tortilla with egg mixture and serve immedately.
