Ingredients

  • 6 Eggland's Best eggs, large
  • 1/4 cup chopped spinach
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons hazelnuts, chopped
  • 1 tablespoon sliced almonds
  • 1/4 teaspoon salt
  • 6 small tortillas
  • 6 teaspoons Mayonnaise

Preparation

  1. Preheat oven to 325 degrees F.
  2. In a medium bowl, combine eggs, spinach, hazlenuts, almonds, and salt; mix well and pour into a large non-stick skillet.
  3. Cook over medium-high heat until eggs are set, approximately 5 minutes. Remove from heat and allow to cool slightly. Stir in parmesan cheese.
  4. Heat tortillas in oven for approximately 5 minutes; remove and spread with 1 teaspoon of mayonnaise each.
  5. To assemble, fill each tortilla with egg mixture and serve immedately.
