Sun Dried Tomato Egg Wrap

Ingredients
2 Eggland's Best Large Eggs
1 handful spinach, chopped
1 tortilla or wrap
1 serving feta (regular or tomato basil)
1 tbsp sun dried tomatoes, chopped
salt/pepper to taste
Preparation
- Heat pan on stove
- Spray pan
- Add handful of chopped spinach to pan and let cook
- Stir up two eggs to add to pan
- Swirl pan to spread eggs out into a thin later
- Place tortilla on eggs right away (while they are still wet)
- Once eggs are cooked, flip tortilla over
- Add feta and sun dried tomatoes to eggs
- Roll or fold tortilla
- Can be made night before but tortilla will not be crispy.
