Star-Shaped Egg in a Hole Sandwich
Why bother with your standard “Egg in a Hole” sandwich when you could eat a star shaped masterpiece? Made with delicious and nutritious Eggland’s Best eggs, this is a breakfast the kids are sure to ask for again and again!

Ingredients
2 Large Eggland’s Best eggs
1 tsp olive oil
4 slices whole wheat bread
¼ cup shredded mozzarella cheese
2 slices tomato
½ avocado
1 small banana
8 oz nonfat milk
Star-shaped cookie cutter
Preparation
- Lightly coat a large skillet with olive oil and heat to medium-high. Using a cookie cutter, cut a star shape into 2 slices of bread. Place one slice of star-shaped bread into the skillet. Crack the Eggland’s Best egg into the center of the bread and repeat with the second slice. Cook for 3-4 minutes, or until the Eggland’s Best egg is set. Remove from pan and add the remaining 2 pieces of bread and the cut-out star shapes. Cook just until lightly toasted.
- Place the uncut pieces of bread on a plate. Spoon and spread the avocado onto the bread. Top with cheese and tomato. Top with the star-shaped egg toast. Serve with the toasted star cut-out.
- Serve with a glass of milk and banana.
