Ingredients

1½ cups gluten free flour mix I use Bob's Red Mill 1-1 for this recipe

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon pink Himalayan salt

½ cup unsweetened applesauce

½ cup maple syrup

2 Eggland's Best eggs, large (beaten)

2 teaspoons vanilla extract

1 cup packed spinach

¼ cup avocado oil

1 cup milk chocolate chips or dark chocolate (you can use more or less)

Preparation

  1. Preheat oven to 350 degrees F.
  2. Prepare muffin pan with liners and spray them with cooking spray.
  3. In a large mixing bowl, combine gluten-free flour, baking powder, baking soda, and salt and mix well.
  4. Combine applesauce, maple syrup, eggs, vanilla, oil, and spinach in a food processor (I use my Vitamix) and blend until the spinach has no visible chunks and mixture is smooth.
  5. Add the wet spinach mixture to the dry ingredients and mix well until combined into a smooth batter. Fold in the chocolate chips.
  6. Using a ⅓ cup measuring cup, scoop the mixture into your muffin tin about ¾ full.
  7. Bake for 18 minutes or until done and stable.
  8. Let cool 10 minutes before moving to a cooling rack.
