Spinach Muffins With Chocolate Chips

Ingredients
1½ cups gluten free flour mix I use Bob's Red Mill 1-1 for this recipe
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon pink Himalayan salt
½ cup unsweetened applesauce
½ cup maple syrup
2 Eggland's Best eggs, large (beaten)
2 teaspoons vanilla extract
1 cup packed spinach
¼ cup avocado oil
1 cup milk chocolate chips or dark chocolate (you can use more or less)
Preparation
- Preheat oven to 350 degrees F.
- Prepare muffin pan with liners and spray them with cooking spray.
- In a large mixing bowl, combine gluten-free flour, baking powder, baking soda, and salt and mix well.
- Combine applesauce, maple syrup, eggs, vanilla, oil, and spinach in a food processor (I use my Vitamix) and blend until the spinach has no visible chunks and mixture is smooth.
- Add the wet spinach mixture to the dry ingredients and mix well until combined into a smooth batter. Fold in the chocolate chips.
- Using a ⅓ cup measuring cup, scoop the mixture into your muffin tin about ¾ full.
- Bake for 18 minutes or until done and stable.
- Let cool 10 minutes before moving to a cooling rack.
