Ingredients
- 2 Eggland's Best eggs
- 3/4 cup fresh spinach leaves
- 3 tablespoons shredded mozzarella cheese
- 1 pinch garlic salt (more or less to taste)
Preparation
Whisk eggs together in a small bowl.
Heat a large, square-shaped non-stick skillet over medium-high heat; pour eggs into skillet.
When eggs begin to thicken, spread cheese evenly over eggs.
Sprinkle with garlic salt, to taste, and evenly spread spinach over top of eggs.
When eggs start to firm, fold omelet in half and then in half again to form a square.
