Spinach and Egg White Scramble
This delicious spinach and egg white scramble is perfect for breakfast or brunch. Made with lots of fresh spinach, onions, nutty parmesan, salt and pepper, it's exceptionally flavorful!

Ingredients
2 cup Eggland’s Best 100% Liquid Egg Whites
½ cup chopped red onion
1 ½ cup chopped fresh spinach
1 ½ tbsp olive oil
½ tsp ground pepper
½ tsp salt
2-3 tbsp grated Parmesan cheese
1 fresh tomato cut in slices for serving (optional)
Preparation
- In a skillet add olive oil and sauté the chopped red onion, add fresh spinach and cook for 3 minutes or until spinach is slightly wilted.
- Add 2 cups Eggland’s Best 100% Egg Whites, salt and pepper, and continue cook.
- Once it is cooked well transfer to plate and add graded parmesan cheese. Serve with fresh tomato slices.
