6 Eggland's Best Hard-Cooked Peeled Eggs
1/3 cup red onions, chopped
1/3 cup mayonnaise
1 teaspoon Dijon mustard
1 tablespoon sriracha(adjust quantity to taste)
1/2 tablespoon red wine vinegar
1 tablespoon chives, chopped
1 tablespoon fresh dill, chopped
Pinch of cayenne pepper
Salt and pepper, to taste
20 crostini, to serve
Preparation
- Chop the hard-boiled eggs to your desired size.
- Transfer them to a large bowl and add in the chopped onion, mayonnaise, mustard, finely chopped herbs, vinegar, sriracha, cayenne pepper, and salt & pepper.
- Mix everything thoroughly using a spatula. Taste the mixture and adjust the seasonings as needed.
- Prepare the crostinis by spraying or brushing them with olive oil, then crisping them in a preheated oven at 400°F until they turn golden brown.
- Once the crostinis are ready, spoon about 1-1.5 tablespoons of the prepared egg salad over each crostini. Garnish with a sprinkle of chopped chives and dill.
