Spiced French Toast with Cranberry Compote

Ingredients
French Toast
2 Eggland's Best Large Eggs
2/3 cup milk of choice
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
2 tablespoons butter
6 slices of gluten-free bread
Cranberry Compote
2 cups fresh or frozen cranberries
1/2 cup light brown sugar
1/3 cup orange juice
1 cinnamon stick
Preparation
- In a large mixing bowl, add the eggs, milk, vanilla, and spices.
- Whisk well.
- Heat a skillet over medium-high heat. Add the butter and allow the butter to melt.
- Dip the slices of bread into the french toast batter, ensuring all sides are well coated.
- Place the bread slice into the skillet and cook for 3-5 minutes on each side, or until golden brown.
- Meanwhile, make the compote by adding all of the compote ingredients to a small saucepan over medium heat.
- Cook for 15 minutes, stirring occasionally until the mixture has thickened and most of the liquid has evaporated. Remove the cinnamon stick.
- Place the french toast on a plate and top with compote before serving.
