Southwestern Egg Scramble
This dish is perfect for a large group for brunch or breakfast. You can also scale this down for smaller servings for a great everyday breakfast!

Ingredients
- 10 Eggland's Best Eggs (large)
- 1/2 cup flour
- 1/4 teaspoon salt
- 1 tsp baking powder
- 1 stick unsalted butter, melted
- 8oz chopped green chilis
- 2 cups cottage cheese, drained
- 1 lb shredded monterey jack cheese
Preparation
Preheat oven to 400F.
Spray a 13 X 9 casserole dish with cooking spray and set aside.
In a medium bowl, blend flour, salt and baking powder together. Set aside.
Beat eggs thoroughly. Slowly add in flour mixture, beating well until all ingredients are incorporated.
Stir in melted butter, chilis, cottage cheese and jack cheese and blend well.
Pour into baking dish. Bake at 400 degrees for 15 minutes.
Reduce heat to 350 and bake for an additional 40 minutes, or until browned.
Remove from oven and cool slightly. Cut into squares and serve.
