S'Mores Skillet Cookie
This S'Mores Skillet Cookie is a twist on your traditional s'mores. The cookie layers are a brown butter graham cracker, which makes for a rich and flavorful texture. In between the layers of cookie, there are marshmallows and Ghirardelli chocolate squares. We used a cast iron skillet and baked it in the oven, which made for a crispy outside and gooey inside! Make sure to use Eggland’s Best Eggs, they have 6 times more Vitamin D and 25% less saturated fat than ordinary eggs, which will makes this recipe a win-win!!

Ingredients
1 cup brown butter
¾ cup dark brown sugar
½ cup sugar
2 Eggland’s Best eggs, large, room temperature
2 tsp vanilla extract
2 cups all-purpose flour
12 graham crackers, pulsed into crumbs (1 ½ cups)
1 tsp baking powder
½ tsp baking soda
1 tsp salt
¼ tsp cinnamon
Optional:
Dark Chocolate Salted Caramel Squares
10-12 large marshmallows
Preparation
- Preheat the oven to 350°F.
- Spray a 10” skillet with cookie spray, set aside.
- Pulse graham cracker crumbs into crumbs need 1 ½ cups, set aside.
- Brown 1 cup of butter, let cool for a few minutes. In a large bowl, whisk together brown butter, brown sugar, and sugar. Whisk in vanilla extract and eggs. Add flour, graham crackers, salt, baking powder, baking soda and cinnamon until combined.
- Pour half of the batter into the prepared skillet. Place marshmallows and chocolate squares on top of cookie dough. Top with remaining dough.
- Bake for 25-30 minutes or until done.
