S'mores Brownies
Rich and fudgy brownies on top of a graham cracker base and topped with toasted marshmallows. S’mores without a campfire!

Ingredients
3/4 cup oil
4 oz unsweetened chocolate bar
1 1/2 cups granulated sugar
3 Large Eggland's Best Eggs, room temperature
2 tsp vanilla extract
1/4 cup all-purpose flour
1/4 cup Dutch-processed cocoa powder
1/2 tsp salt
1 cup dark chocolate chips
6 sheets graham crackers
2 1/2 cups mini marshmallows
Preparation
- Preheat oven to 350 degrees F. Line an 8 x 8 pan with parchment paper.
- Melt unsweetened chocolate bar over low heat until fully melted. Pour into a large bowl. Add in oil and sugar and whisk until fully combined. Add in eggs and vanilla extract and whisk for 2-3 minutes until fully combined.
- In a separate bowl, whisk together all-purpose flour, Dutch-processed cocoa powder, and salt. Pour into wet ingredients and gently fold mixture until just combined. Stir in dark chocolate chips.
- Place graham cracker sheets in a single layer in the prepared pan. Pour brownie batter on top and bake for 40 minutes. Remove from oven and turn on broiler. Top with marshmallows and return to oven for 2 minutes until marshmallows start to toast.
- Allow brownies to cool for at least 20 minutes before removing from pan. Slice and enjoy!
- Store covered at room temperature.
