Ingredients

15 Eggland's Best Hard-Cooked Peeled eggs

1 lb. medium shrimp cooked, deveined, and shells removed (you can buy them frozen like this for convenience)

1 celery stalk

1/2 red bell pepper

1/4 cup mayonnaise

1/2 tsp Dijon mustard

salt to taste

paprika (optional as garnish)

Preparation

  1. Cut the hard-cooked in half lengthwise and remove the yolk and place in a large bowl.
  2. Transfer the egg white halves to a serving tray.
  3. Chop the cooked shrimp and place in the same bowl as the yolks.
  4. Add the celery, bell pepper, mayonnaise, and mustard. Stir to blend and season to taste with salt.
  5. Fill each egg white with the shrimp mixture. Optional: Garnish with paprika or fresh diced chives for color.
