Scotch Egg
5 Eggland's Best eggs, large (hard or soft boiled)
1/2 lb Ground sausage (mild or hot)
1 Eggland's Best egg, large
2 tbsp Milk
1 Cup Italian bread crumbs
1/3 Cup Flour
Dipping Sauce
1/2 cup Mayo
1 tbsp Dijon mustard
1 tsp Soy sauce
1/2 tsp Garlic powder
1/2 tsp Paprika
1/4 tsp Onion powder
1 tsp Honey or Agave
1 tsp Lemon juice
Salt & Pepper to taste
Preparation
- In a pot of water, bring to a boil and add in eggs. Boil for about 6-7 minutes or use an egg timer. Remove from water and place into a bowl of ice water.
- Once eggs are cooled, peel and set aside. Grab 3-4 ounces of sausage meat and flatten to 1/4 inch thick. Once it becomes the size of your hand place egg in the center. Pinch edges closed until all of the egg is covered.
- Prepare 3 separate bowls, first with Italian bread crumbs, another with scrambled eggs and milk, and the last one with flour.
- Coat each sausage wrapped egg with flour, then coat in egg mixture and then cover in bread crumbs. Make sure to press bread crumbs into each one. Set aside until ready to fry. Heat oil to 325 degrees or set the heat to low. Once hot, fry each sausage egg one at a time for 5-6 minutes until golden brown.
- Let cool. Enjoy with or without dipping sauce.
