A Scotch egg is a beloved British delicacy that has become a popular choice for picnics and on-the-go meals. While traditionally deep-fried, our healthier version of this scotch egg recipe transforms the classic dish by using lean ground turkey and baking it to golden perfection in a high-temperature oven.

Ingredients

4 Eggland's Best Hard Cooked and Peeled Eggs

1 Eggland's Best egg, well beaten

3/4 pound ground turkey

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon dried basil

1/2 cup bread crumbs

1/4 cup all-purpose flour

Preparation

  1. Preheat oven to 400 degrees F.
  2. Mix ground Turkey with salt, pepper, oregano and basil; divide into 4 equal portions and set aside.
  3. Dip hard cooked eggs in water and then coat with flour.
  4. Wrap each egg with meat, making sure they are covered completely.
  5. In a small bowl, beat the remaining egg until smooth. Dip each meat-covered hard cooked egg in beaten egg, then cover thoroughly in breadcrumbs; repeat for all eggs.
  6. Cover all prepared eggs and chill in refrigerator for 1 hour.
  7. Bake on a cookie sheet for 30 minutes, or until golden brown. Serve alone, or along with a fresh green salad.
