6 Eggland’s Best eggs, large
2 medium sweet potatoes, diced and roasted
1 medium onion, thinly sliced
1 cup baby spinach
½ cup shredded Gruyère cheese
1 tbsp olive oil
Salt and pepper to taste
Preparation
- Preheat the oven to 375°F. Sauté the onions in a medium, oven proof frying pan with olive oil until caramelized, then add the roasted sweet potatoes and spinach.
- Whisk the eggs with salt and pepper. Pour over the vegetables and stir to combine.
