6 Eggland’s Best eggs, large

2 medium sweet potatoes, diced and roasted

1 medium onion, thinly sliced

1 cup baby spinach

½ cup shredded Gruyère cheese

1 tbsp olive oil

Salt and pepper to taste

Preparation

  1. Preheat the oven to 375°F. Sauté the onions in a medium, oven proof frying pan with olive oil until caramelized, then add the roasted sweet potatoes and spinach.
  2. Whisk the eggs with salt and pepper. Pour over the vegetables and stir to combine.
  3. Sprinkle Gruyère cheese on top and bake for 20-25 minutes until golden brown.
