Ingredients

4 large eggs
1/2 cup shredded zucchini (squeeze out excess water)
1/4 cup shredded carrot
1/4 cup shredded cheese (cheddar or mozzarella)
2 tbsp chopped cilantro
1/4 tsp salt (adjust to taste)
1/4 tsp garlic powder
1/3 cup Greek yogurt 
2 tablespoons Hot sauce
Oil to spray waffle maker

Preparation

To make the Egg Waffles with Cheese and Vegetables

  1. Start by preheating your waffle maker and greasing it with oil spray. 
  2. In a bowl, whisk the eggs and then mix in the shredded zucchini, carrot, cheese, cilantro, salt, and garlic powder until well combined. 
  3. Next, pour the mixture into the waffle maker and cook for 3-5 minutes, or until the waffles are golden and set.
  4. Once done, serve them warm with a dollop of Greek yogurt and a drizzle of hot sauce.
