Gluten Free Fruit Pizza

Ingredients
Cookie:
1 Eggland's Best Large egg
2 cups gluten free flour
1 tsp baking powder
1 cup sugar
1/4 tsp salt
3/4 c butter
2 tsp vanilla
Frosting:
6 tbsp butter or shortening
3/4 cup powdered sugar
8 oz cream cheese
1 tsp vanilla
strawberries and blueberries for topping
Preparation
- Preheat oven to 350F
- Mix dry ingredients for the cookies in one bowl, and wet ingredients in another
- Combine wet and dry ingredients until dough forms (note: you might need to add a little extra liquid like a tsp of water or milk to get the dough from crumbling)
- Spread dough onto a cookie pan and use a rolling pin to smooth out the dough into a pizza shape
- Bake for 20-25 minutes
- For frosting, use shortening or butter at room temp. Combine remaining ingredients until a fluffy, smooth consistency is achieved
- Allow the cookie to cool, then spread on frosting and add your favorite red and blue fruits!
- Slice and enjoy!
