Red Velvet Ice Cream Sandwiches

Ingredients
1 box red velvet cake mix
1/2 cup unsalted butter, melted
2 Eggland’s Best Large Eggs
1 cup white chocolate chips
8 cups Vanilla Ice Cream

Preparation
- Preheat oven to 350F degrees and line a baking sheet with parchment paper.
- In a large bowl, combine the cake mix, butter, and eggs. Add in white chocolate chips and mix again. Make 4tbsp balls of dough and place on baking sheet. Bake for 12-15 min.
- Allow them to fully cool then assemble by placing a scoop of ice cream on one cookie and pressing another cooke on top to create the sandwich. Roll the edges of the ice cream through a plate of sprinkles. Freeze or enjoy immediately!
