Red Velvet is the new box of chocolates for Valentine’s Day, and we are totally here for it! These blondies are rich & fudgy (minus the chocolate, of course!) They are moist on the inside and crisp on the edges making them the perfect treat!

Ingredients

For Blondie Batter:

½ cup unsalted butter, at room temperature

½ cup light brown sugar

½ cup granulated white sugar

1 Eggland's Best egg, large

1 teaspoon vanilla extract

1 teaspoon red food coloring

¾ cup all-purpose flour

¼ cup cocoa powder

¾ teaspoon baking soda

½ teaspoon salt

For Icing:

2 oz cream cheese, at room temperature

¼ cup unsalted butter, at room temperature

1 cup confectioner’s sugar

2 tablespoon milk

1 teaspoon vanilla extract

Preparation

  1. Preheat the oven to 350°F. Grease an 8X8 baking pan and line a parchment paper; keep it aside.
  2. In a large bowl combine the butter and sugar, beat until creamy.
  3. Add in the Eggland’s Best egg, vanilla, red food color and beat until well combined.
  4. Combine the dry ingredients slowly; flour, cocoa powder, salt, baking soda and mix it.
  5. Pour the batter on the prepared baking pan and bake it for 20 minutes, until the toothpick inserted comes out clean.
  6. Allow the blondies to cool down for 10 minutes.
  7. Meanwhile, prepare the icing by beating the cream cheese and butter together in a bowl. Slowly add the sugar and vanilla and beat until light and fluffy.
  8. For a thinner consistency add 2-3 tablespoons of milk to the icing. Pour the icing over the blondies.
  9. Slice into squares and serve the blondies.
