Red Velvet Blondies
Red Velvet is the new box of chocolates for Valentine’s Day, and we are totally here for it! These blondies are rich & fudgy (minus the chocolate, of course!) They are moist on the inside and crisp on the edges making them the perfect treat!

Ingredients
For Blondie Batter:
½ cup unsalted butter, at room temperature
½ cup light brown sugar
½ cup granulated white sugar
1 Eggland's Best egg, large
1 teaspoon vanilla extract
1 teaspoon red food coloring
¾ cup all-purpose flour
¼ cup cocoa powder
¾ teaspoon baking soda
½ teaspoon salt
For Icing:
2 oz cream cheese, at room temperature
¼ cup unsalted butter, at room temperature
1 cup confectioner’s sugar
2 tablespoon milk
1 teaspoon vanilla extract
Preparation
- Preheat the oven to 350°F. Grease an 8X8 baking pan and line a parchment paper; keep it aside.
- In a large bowl combine the butter and sugar, beat until creamy.
- Add in the Eggland’s Best egg, vanilla, red food color and beat until well combined.
- Combine the dry ingredients slowly; flour, cocoa powder, salt, baking soda and mix it.
- Pour the batter on the prepared baking pan and bake it for 20 minutes, until the toothpick inserted comes out clean.
- Allow the blondies to cool down for 10 minutes.
- Meanwhile, prepare the icing by beating the cream cheese and butter together in a bowl. Slowly add the sugar and vanilla and beat until light and fluffy.
- For a thinner consistency add 2-3 tablespoons of milk to the icing. Pour the icing over the blondies.
- Slice into squares and serve the blondies.
