6 Eggland’s Best eggs, large

1 Red bell pepper

6 Hard taco shells

1 Avocado

Handful shredded cheese

Handful red cabbage

Sour cream (Optional)

Taco sauce (Optional)

Preparation

  1. First, prep your rainbow by dicing vegetables and arranging toppings in rainbow order.
  2. Scramble eggs for the “yellow” rainbow color.
  3. Sauté bell pepper until softened.
  4. Fill taco shells by arranging in layers, starting with red or purple at the bottom.
  5. Top with taco sauce and/or sour cream.
