1 Red bell pepper
6 Hard taco shells
1 Avocado
Handful shredded cheese
Handful red cabbage
Sour cream (Optional)
Taco sauce (Optional)
Preparation
- First, prep your rainbow by dicing vegetables and arranging toppings in rainbow order.
- Scramble eggs for the “yellow” rainbow color.
- Sauté bell pepper until softened.
- Fill taco shells by arranging in layers, starting with red or purple at the bottom.
- Top with taco sauce and/or sour cream.
