2 Eggland's Best eggs, large

2 tablespoons pumpkin puree

1/2 cup milk

8 slices white bread

1/2 teaspoon cinnamon

1/2 tablespoon brown sugar

1/2 teaspoon salt

2 tablespoon confectioners sugar

2 tablespoons butter

Preparation

  1. Prepare pumpkin puree by boiling and mashing fresh pumpkin or you can use canned puree.
  2. In a bowl, whisk together the pumpkin puree, eggs, milk, sugar, cinnamon, and salt until smooth.
  3. Dip thick slices of bread into the pumpkin mixture, coating both sides.
  4. Heat butter in a skillet over medium heat. Fry the coated bread slices for 2-3 minutes per side, until golden brown and crispy.
  5. Serve with whipped butter, syrup, chopped nuts, and a dusting of powdered sugar.
