Ingredients

1 Large Eggland's Best egg

34 cup red quinoa

34 cup black beans

34 cup corn

1 medium ripe avocado

34 cup salsa

Preparation

  1. Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low. Cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes.
  2. Fluff with a fork.
  3. Add quinoa to a serving bowl.
  4. In another pan, cook Eggland's Best egg over medium heat for about three minutes.
  5. Top quinoa with black beans, corn, salsa and Eggland's Best egg.
  6. Serve and enjoy!
