Pinwheel Cookies
Pinwheel Cookies is a perfect kids friendly patriotic snack/dessert that can be made with your kids for July 4th.

Ingredients
3 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, at room temperature
1 ¼ cup granulated sugar
2 Eggland's Best eggs, large, at room temperature
1 tablespoon vanilla extract
Red food coloring, few drops
Blue food coloring, few drops
Preparation
- In a medium bowl combine the dry ingredients; flour, baking powder and salt. In a large bowl, beat the butter and sugar on low speed using an electric mixer until light.
- Add the eggs one by one until well combined, then add the vanilla extract.
- Slowly add the dry mixture in batches and mix on low speed until everything is fully incorporated.
- Divide the cookie dough into three equal portions and place it in a bowl. Add the red food color to one bowl and mix them thoroughly. Add the blue food color to the other bowl and mix. Wrap the blue dough, red dough and plain dough individually using the cling wrap and refrigerate for 30 minutes.
- Place the dough in between the parchment paper and roll the dough into a rectangular shape using a rolling pin.
- Wrap the rolled dough and refrigerate again for 10 minutes.
- Now place the rectangular dough one above the other and roll them from the shorter end tightly forming a log. Wrap them with cling wrap and refrigerate for 30 minutes.
- Preheat the oven to 350° F and line a baking sheet with parchment paper.
- Slice the log to ¼ inch thick rounds and place them on the prepared baking tray and bake for 10-12 minutes.
- Allow the cookies to cool down for 10 minutes and then serve!
