Peppermint Italian Meringue
This recipe is perfect for topping on hot cocoa and other holiday baked goods. It has a slight hint of peppermint that truly captures the spirit of the holidays. It's a recipe the whole family will love.

Ingredients
2 c. white sugar
1 c. water
1/2 c. of Eggland's Best 100% Egg Whites
1 Tbsp. peppermint extract
1/2 tsp. cream of tartar
Preparation
- In a pot, add the sugar and water. Bring to a boil on medium-low heat. Stir occasionally. Once the mixture starts to boil, leave on medium-high heat for about 3 minutes.
- Add Eggland's Best 100% Egg Whites to a mixer. Mix on medium speed until the egg whites start to foam. Slowly add the sugar water mixture into the center of the egg whites.
- Once all the sugar water is in, switch the speed to high. Add in the peppermint extract and cream of tartar. Continue mixing on high until peaks form and the meringue becomes stiff.
- Once it's stiff, stop mixing. Place the meringue into a piping bag and pipe over your cups of hot cocoa. Serve and enjoy.
