Pecan Pie Brownies

Brownie Layer
1 cup oat flour
¾ cup cocoa powder
½ TSP salt
1 ½ TSP baking powder
2 Eggland's Best eggs, large
¼ cup coconut oil, melted
⅔ cup almond butter (or other nut or seed butter of choice)
1 cup pure maple syrup
½ cup unsweetened applesauce
1 tsp pure vanilla extract
Pecan Pie Topping
1 Eggland's Best egg, large
¼ cup coconut oil, melted
¼ cup + 2 tbsp pure maple syrup
1 TSP pure vanilla extract
¼ cup + 2 TSP coconut sugar
1 ⅓ cups chopped pecans
Preparation
- Preheat the oven to 325°F and line an 8×8 baking dish with parchment paper.
- While the oven preheats, make the brownie batter: whisk together 2 eggs in a large bowl then add in the remaining wet ingredients. Whisk everything together then add in the dry ingredients and whisk again until smooth.
- Pour the brownie batter into the prepared baking dish and bake in the oven for 25 minutes, until just set.
- While the brownies bake, prepare the pecan pie topping: whisk 1 egg in a medium sized bowl then add in the remaining ingredients. Mix everything together until smooth and set aside.
- After 25 minutes, remove the brownies from the oven and top with the pecan pie topping. Gently spread the pecan pie topping out then return the brownies to the oven and bake for an additional 25 minutes.
- Remove the brownies from the oven and let them cool completely, then slice and serve!
