Patriotic Swirl Cookie Sandwiches
Soft cake mix cookies made with patriotic baking chips and filled with a patriotic buttercream swirl.

Ingredients
Cookies:
1 box white cake mix
2 Eggland's Best eggs, large
2 tsp water
1/2 c vegetable oil
1/2 c red white and blue baking chips. *optional sprinkles
Buttercream:
2 sticks butter
4 c powdered sugar
1 tsp vanilla
2-3 tsp heavy cream
red food coloring
blue food coloring
Preparation
- Preheat oven to 350° F. In a large bowl, combine the cake mix, water, oil and eggs. Stir in the chips.
- Using a large cookie scoop place dough 2" apart on a parchment-lined cookie sheet.
- Bake for 10-12 minutes. Let cool completely.
- In a mixing bowl, beat the butter until smooth. Add in the powdered sugar, vanilla, and cream. Mix until smooth.
- Separate the frosting into three bowls. In one bowl, add red food coloring until you get the desired color. In another bowl, do the same with blue.
- Fill 3 piping bags with round tips. Lay the cookies onto a flat surface.
- Turn half upside down. Pipe large circles of frosting onto each cookie, alternating colors.
- Add patriotic sprinkles if desired.
- Top with another cookie.
- Repeat until all of the cookie sandwiches are finished.
