Orange Poppy Seed Cake

Ingredients
Cake:
- 1 box yellow cake mix
- 1 small box (3 oz.) instant vanilla pudding
- 1 cup orange juice
- 1/2 cup canola oil
- 4 Eggland's Best eggs, large
- 2 tablespoons poppy seeds
- 2 tablespoons grated orange rind
Glaze:
- 2 tablespoons butter
- 2 tablespoons brown sugar, packed
- 2 tablespoons milk
- 3/4 cup confectioner's sugar
Preparation
- Preheat oven to 325 degrees F; coat bundt pan with non-stick cooking spra.
- Combine all ingredients in a large bowl and mix with a hand mixer, or using a stand mixer fitted with the whisk attachment, for 3 minutes.
- Pour batter into prepared pan and bake for 50 minutes, or until tester inserted in the middle comes out clean.
- When cake is cooled, prepare glaze. Melt butter in microwave set on low, or over low heat on your stovetop.
- Add milk and brown sugar into melted butter and whisk until combined and sugar is melted.
- Add powdered sugar into brown sugar mixture and continue to whisk until combined and pour over cake.
Note: you can use more or less powdered sugar, depending on how thin or thick of a consistency you prefer the glaze.
