Ingredients

2 Eggland’s Best eggs, room temperature

2 1/2 cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

1/4 tsp salt

Zest of 1 large orange, divided

1/2 cup orange juice, freshly squeezed

6 tbsp unsalted butter, softened

1 cup granulated sugar

1 1/2 cups fresh cranberries, rinsed and patted dry

½ tsp cinnamon

¼ tsp ground ginger

¼ tsp nutmeg

Preparation

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, ground ginger and salt together in a large bowl.
  2. In a small bowl stir in orange zest and cranberries. Set aside.
  3. Beat butter, sugar, and egg together in a large bowl until smooth. Stir in orange juice. Beat in flour mixture until just moistened.
  4. Fold in cranberries and orange zest. Pour into prepared pan.
  5. Bake in the preheated oven until the bread springs back when lightly touched, about 1 hour. Let stand for 10 minutes, then turn out onto a wire rack to cool.
