Orange Cranberry Loaf
This loaf is made with freshly squeezed orange juice and fresh cranberries with touch of spices like, cinnamon, ground ginger and nutmeg.

Ingredients
2 Eggland’s Best eggs, room temperature
2 1/2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1/4 tsp salt
Zest of 1 large orange, divided
1/2 cup orange juice, freshly squeezed
6 tbsp unsalted butter, softened
1 cup granulated sugar
1 1/2 cups fresh cranberries, rinsed and patted dry
½ tsp cinnamon
¼ tsp ground ginger
¼ tsp nutmeg
Preparation
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, ground ginger and salt together in a large bowl.
- In a small bowl stir in orange zest and cranberries. Set aside.
- Beat butter, sugar, and egg together in a large bowl until smooth. Stir in orange juice. Beat in flour mixture until just moistened.
- Fold in cranberries and orange zest. Pour into prepared pan.
- Bake in the preheated oven until the bread springs back when lightly touched, about 1 hour. Let stand for 10 minutes, then turn out onto a wire rack to cool.
