Topping:

2 tablespoons unsalted butter, softened

3 tablespoons light brown sugar, lightly packed

1/2 teaspoon vanilla extract

5 tablespoons all-purpose flour

2 tablespoons old-fashioned rolled oats

1/16 teaspoon salt

Muffins:

3/4 cup whole milk

1/2 cup vegetable oil, or avocado oil

2 Eggland’s Best eggs, large

2 teaspoons vanilla extract

3/4 teaspoon apple cider vinegar

1 1/2 cups all-purpose flour

1 cup quick oats

1/2 cup granulated sugar

1/4 cup light brown sugar, lightly packed

2 teaspoons baking powder

1 teaspoon cinnamon

3/4 teaspoon salt

1/4 teaspoon nutmeg

1/4 teaspoon baking soda

Preparation

  1. Preheat the oven to 400F.
  2. Line 2 large mini muffin trays with paper liners (you will need 48 papers).
  3. For the topping, use a fork to mix together the butter, brown sugar, and vanilla in a medium bowl.
  4. Add the flour, oats, and salt and mix with your hands until the mixture is crumbly.
  5. For the muffins, whisk together the milk, oil, eggs, vanilla, and vinegar in a medium bowl.
  6. In a large bowl, whisk together the flour, oats, granulated sugar, brown sugar, baking powder, cinnamon, salt, nutmeg, and baking soda. Add the wet ingredients to the dry and stir to combine, being careful not to over-mix.
  7. Let the batter sit for 10 minutes (it will thicken slightly).
  8. Pour the batter into the lined muffin wells and sprinkle a little crumble topping on each.
  9. Bake until a toothpick inserted in the center comes out clean or with just a couple crumbs, about 12 to 14 minutes, rotating the trays once halfway through.
