Nadia's Jelly Bean Cupcakes
Simple and sweet buttery mini muffins that are toddler friendly. These are moist, delicious and made with applesauce instead of sugar.

Ingredients
1/2 teaspoon of salt
1 1/2 teaspoon baking powder
2 Eggland's Best eggs, large
3/4 cup of applesauce
1 1/2 stick of sweet butter.
1 teaspoon pure vanilla extract
1/4 cup of milk
Choice of jelly bean
favorite frosting for topping
Preparation
- Preheat the oven to 350° F and position a rack in the middle of the oven.
- Whisk the flour, baking powder and salt together in a medium bowl.
- In another bowl, beat the EB eggs with applesauce until light and foamy, about 2/3 minutes. While beating, gradually pour in the melted sweet butter and then the vanilla.
- Keep mixing slowly and add half of the flour mixture. When all mixed add the milk, and slowly the remaining flour mixture; make sure to not over-mix the batter.
- Divide the batter evenly in the prepared muffin tin. You can use a regular muffin tin or a mini muffin tin.
- Bake for about 15 min or until you do the cake test with a toothpick (insert the toothpick in the middle, if it comes out clean it's ready!)
- Let it cool for 10 min and frost and decorate with all the fun jelly beans.
