Mushroom Toast
This mushroom toast with fried egg on top makes a delicious snack or appetizer; and seriously an umami-packed toast!

Ingredients
1lb mushrooms of your choice, cleaned and chopped
4 garlic cloves, minced
3-4 sprigs of fresh thyme
4 tbsp butter, divided
salt and pepper, to taste
4 slices sourdough bread
4 Eggland's Best Large Eggs
Preparation
- Add 2 tbs butter to a skillet over high-heat. Add mushrooms and cook, stirring, until lightly browned. Add thyme and garlic, stir to coat. Season well with salt and pepper
- Meanwhile, toast sourdough bread slices until golden. Lightly butter them
- Melt the rest of butter, then crack eggs, one at a time, into pan. Cook for 3 mins, or until white is set
- Serve the mushrooms on toast, then top with fried egg
