Ingredients
1 cup rolled oats
2 cups milk of choice
1/3 cup Eggland's Best 100% Liquid Egg Whites
1.5 tbsp Greek yogurt
1/2 cup grated carrots
1/2 cup diced apple
3 tbsp raisins or chopped dates
1 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
Optional toppings: Extra grated carrots, apples, raisins, pecans, cinnamon and maple syrup
Preparation
- In a small pot over medium heat, add oats and milk and simmer for 7-10 minutes, stirring regularly until the oats have absorbed most of the liquid.
- Add egg whites, yogurt, granted carrots, apple, raisins, maple syrup, vanilla, cinnamon and nutmeg and mix until well combined.
- Serve with extra toppings, enjoy!
