Mixed Berry Clafoutis

Ingredients
3 Eggland’s Best Eggs, large
2 Teaspoons cornstarch
1 pint of Raspberries
1 pint of Blackberries
1 Cup 1% milk
1/2 Cup all-purpose flour
1/3 Cup granulated sugar
3 Tablespoons of orange juice
Orange zest
2 Tablespoons butter
1 Tablespoon powdered sugar
Preparation
- Preheat oven to 350°F.
- Butter a 10-inch glass or ceramic pie dish.
- Halve blackberries and place them cut side down in a baking dish and mix in the raspberries.
- Coat berries with cornstarch and discard excess,
- Blend milk, Eggland’s Best Eggs, flour, sugar, orange juice/zest and butter until smooth and pour over the berry dish.
- Bake 45 minutes until top is golden brown and the filling has risen and is firm in the center.
- Let cool for 10 minutes and finish with dusting of powdered sugar.
