Miniature Egg Boats

Ingredients
6 Eggland’s Best eggs, large (1 per boat)
1 large french baguette
Goat cheese crumble
Sun-dried tomatoes, chopped
6 basil leaves, sliced to garnish
1-2 tbsps olive oil
Preparation
- Preheat oven to 375°F. Line baking sheet with parchment paper, set aside.
- Slice baguette into 6 equal pieces. Use a knife to carve out a round section from the center of each “boat”. Hollow out inside as much as possible without ripping through sides.
- Brush sliced sides and inside of boats with olive oil. Place on prepared baking sheet.
- Add roughly 1 tablespoon of goat cheese and a few slices of sun-dried tomatoes to each boat hole.
- Crack 1 EB egg on top of cheese and tomato.
- Place boats on a large baking sheet and bake for 20 to 25 minutes, or until bread is golden and eggs are set.
- Garnish with fresh basil and enjoy!
