Mini Waffle Breakfast Sandwich

Ingredients
- 1/3 cup pancake mix, complete
- 3 Eggland's Best Eggs (large)
- 4 each bacon slices
- 1/4 cup american cheese
Preparation
Preheat waffle iron and spray with non-stick cooking spray.
Mix together batter ingredients according to package instructions.
Pour 1/3 cup of batter into waffle iron and cook for 3 minutes. Check to waffle is done cooking.
Meanwhile, heat a medium sized skillet on medium-high heat until hot. Add bacon and cook until cripsy.
Remove and set aside on paper towels.
Lower flame to medium-low heat.
Whisk eggs in a medium size bowl and gently pour into skillet.
As eggs begin to set, pull across skillet with a spatula forming soft curds.
Continue cooking until eggs are no longer liquid. Remove from heat and move cooked eggs to plate.
When waffle is ready, remove and let cool slightly. Slice into fourths.
Set two pieces as bottoms and stack 1/2 the scrambled eggs, two bacon slices, and a slice on cheese on each.
Top with the remaining two waffle pieces and enjoy!
